Ohitsu traditional Japanese round lidded container to store cooked rice. Freshly cooked rice contains much moisture and naturally occur dew water. This dew water return to the cooked rice and cause yellowing then spoils the rice taste. The role of Ohitsu is first absorb moisture and second keep releasing moisture to the rice of course it has some heat retention.
